Sublime Restaurant is the brainchild of Chef Sergio Díaz, a culinary virtuoso with an impressive 18-year journey in the gastronomy industry. Hailing from Quetzaltenango, Guatemala, Chef Díaz discovered his true calling in the kitchen during his formative years spent in the family restaurant, influenced by his mother’s culinary heritage.

After pursuing culinary studies and earning recognition as the top student at the Culinary Cooking School in Chile, Chef Díaz honed his skills in distinguished establishments worldwide. His culinary pilgrimage took him to renowned seven-fork category restaurants such as Puerto Fuy, Ox Restaurant, and Alinea in the USA, working with culinary luminaries like Chef Montse Estruch and Chef Grant Achatz.

The transformative experience abroad inspired Chef Díaz to return to Guatemala, where he joined the Fine Dining Group as Executive Chef, earning the prestigious title of “Chef de Jade” and securing the “Chef of the Year” award. Fueled by his roots and talent, Chef Díaz founded Sublime, a restaurant that eloquently narrates stories through innovative dishes, reinterpreting flavors with locally sourced Guatemalan ingredients.

Sublime has swiftly ascended the culinary ranks, securing the 31st position on Latin America’s Top 50 Restaurant list in 2022 and climbing to the 24th spot in 2023. Notably, for the second consecutive year, Sublime was celebrated as the best restaurant in Guatemala in 2023.

The restaurant’s menu is a canvas of culinary artistry, exemplified by dishes like “UAXACTUN,” featuring velouté de yuca, ichintal, nibs de cacao, and achiote, drawing inspiration from Mayan archaeological sites. Other gastronomic delights include “TIKAL,” with cured tuna, jumbo shrimp, and habanero chile water, paying homage to the significant Mayan city, and “NEBAJ,” showcasing crab, hoja santa, and smoked chili oil, inspired by anthropological research in Panajachel.

Sublime Restaurant, under Chef Sergio Díaz’s guidance, continues to elevate Guatemalan cuisine to new heights, crafting a dining experience that marries tradition with innovation and proudly represents Guatemala on the international culinary stage.
