Having opened its doors in May 2022 at the luxurious The edge Bali, The cave by Chef Ryan Clift has already turned the tourist havens culinary scene on its head with its exceptional menu that makes a meal at this new restaurant simply unforgettable.
Seating at The cave by Chef Ryan Clift is limited to just 22 diners per sitting, which makes securing a table at this restaurant an exclusive affair. If you are successful, you are in for a sublime experience in a setting that is as impressive as the seven-course menu. The first of the seven courses is a four-part snack.
With two options to choose from (Classic or Vegetarian), guests can look forward to delicacies such as a savoury doughnut – a lightly fried brioche injected with mushroom puree, topped with a pickled mushroom and a slice of jellied mushroom dusted with white truffle dust, Hokkaido scallop, Tajima wagyu for meat eaters or nori cracker and carrot tartar on the non-meat menu, as well as other unique courses on their menu. All dishes are rich in Umami, low in fat and gluten, and finalized to perfection in the live kitchen in the cave.
Believed to be over 25,000 years old, the home of The cave by Chef Ryan Clift was discovered over six metres below ground in 2013. It was initially conserved and restricted to the public, but thanks to Clift’s history-making concept, guests are now welcome at the cave restaurant – the first of its kind in Indonesia.
