Trentino is a land of mountains, forests, and crystal-clear waters. One of its golden threads is the Avisio River, which rises among the Dolomite rocks and flows down into the valley, winding through spectacular landscapes and villages rich in history and tradition. Following the course of the Avisio is a fascinating way to discover the authentic heart of this region. Here is an itinerary that begins in the Dolomites of Val di Fassa and reaches the Rotaliana Plain, with unmissable stops where nature, flavour, and hospitality come together.
Canazei – Chalet Pineta: A retreat in the heart of the Dolomites
Our journey begins in Canazei, one of the jewels of Val di Fassa, at the foot of the majestic Dolomite peaks. Here, nestled in a silent pine forest, lies Chalet Pineta, a place where time seems to slow down. This peaceful haven offers warm, family-style hospitality, Alpine-inspired rooms, and breathtaking views of the mountains. In the morning, the scent of wood and birdsong accompany a rich breakfast of local products. From here, beautiful walks start along the Avisio stream, through trails, little bridges, and scenic viewpoints.
Soraga – GOOFI Restaurant: Valley flavours with a view
Following the Avisio downstream, we stop in Soraga, a picturesque village set among the peaks. Here you’ll find Goofi Restaurant, a young and creative venue surrounded by greenery and overlooking the river. The atmosphere is refined, with a modern style that blends harmoniously with the surrounding nature.
The menu features local dishes reinterpreted with flair and imagination: don’t miss the “revolutionised” canederli and the homemade desserts. All paired with Trentino wines and warm hospitality. A perfect pause for relaxation and taste before continuing the journey.
Segonzano – Beghel Winery: Where wine meets stone
Continuing south, the Avisio flows through Val di Cembra, renowned for its terraced vineyards and porphyry rocks. In Segonzano, in an area steeped in history and nature, you’ll find Beghel Winery, a family-run estate cultivating vines with passion and respect for the environment. Here you can enjoy a guided tour among the vineyards and cellars, tasting fresh, aromatic white wines such as Müller Thurgau, while discovering the secrets of mountain winemaking. The atmosphere is authentic, and the landscape — with castles and earth pyramids — is simply breathtaking.
San Michele all’Adige – Da Silvio Restaurant: Tradition and hospitality
Our journey along the Avisio ends in the Rotaliana Plain, where the river meets the Adige, symbolically joining Trentino’s “great river.” In San Michele all’Adige, right next to the famous Agricultural Institute, stands Da Silvio Restaurant, a true institution for lovers of authentic Trentino cuisine. In a rustic yet elegant setting, guests can savour traditional dishes such as carne salada, tortel di patate ( potato pie), and mountain cheeses. Everything is paired with carefully selected local wines. The attentive, family-style service makes this a genuine gastronomic “treat” to end the journey.
A journey through nature, flavour, and tradition
Following the Avisio from its Dolomite sources to the plain is an experience that combines spectacular landscapes, genuine cuisine, and memorable encounters. Each stop tells a different story of Trentino: the mountains, the valleys, the vineyards, and the plains. It’s the perfect journey for those who love to explore at a gentle pace, guided by the waters that have always united these lands.
