Torno Subito, Massimo Bottura’s acclaimed Michelin-starred Italian restaurant at W Dubai – The Palm, is delighted to welcome Chef Federico Marras as its new Chef de Cuisine and unveil a captivating new menu curated by his masterful hand. 

Chef Marras boasts an impressive culinary journey spanning over 15 years. Having honed his skills at the esteemed Ipssar Tor Carbone in Rome, he has since played pivotal roles in renowned establishments worldwide, including Dinner by Heston Blumenthal in Dubai and London, and St. George Restaurant by Heinz Beck in Taormina. 

His dedication to excellence and innovative spirit have garnered praise from both diners and industry professionals alike. Massimo Bottura himself expresses his enthusiasm: “We are thrilled to welcome Chef Federico to our team. His extensive experience, passion for Italian cuisine, and innovative approach to cooking make him the perfect addition to our restaurant. The refreshed menu showcases tantalizing starters such as the Seafood Salad with pan-seared squid, pickled mussels, octopus in a lemon and lime dressing, Tuna Belly Ham with Focaccia, Figs, and Melon, Vitello Tonnato complimented with parsley oil and veal demi glaze and the classic Caprese Salad made with buffalo mozzarella, tomato slices, and basil sauce. For mains, guests can indulge in the hearty Lamb in Vignarola with sautéed lettuce with broad beans, pecorino sauce, lamb sauce, and artichoke cooked in barigol, the delectable Seppia & Piselli cooked with peas puree, squid ink sauce, garden peas and lemon gel and the flavorful Fritto Misto with prawns, squid, fish, ginger mayo, and a vibrant red onion chutney gel. To finish the meal on a sweet note, guests will have a selection of desserts such as the iconic Tiramisubito, the refreshing Lychees & Blueberries, and the creamy Ricotta and Cherries. 

For a truly immersive culinary adventure, guests can explore two special tasting menus, available in both vegan and non-vegan options.
