SanSara – A Royal Indian Culinary Journey by the Waterfront

SanSara sits gracefully on the Singapore River, part of the rejuvenated Grand Copthorne Waterfront Hotel Singapore, offering a fine‑dining encounter rooted in North India’s rich culinary traditions. Its name, derived from Sanskrit meaning “to flow”, reflects the restaurant’s ethos: food and culture in continuous, evolving dialogue. Named among Luxury Lifestyle Awards’ Top 100 Restaurants of the World, it also enjoys high praise from TripAdvisor and Tatler Asia for its authentic North Indian journey.

Master Chef Pannalal Nath, originally from West Bengal and with more than 25 years of experience across North India, leads the kitchen. His devotion to Awadhi cuisine, a legacy influenced by Mughal, Turkish, and Persian traditions, is evident in dishes that balance classic textures with modern presentation. Under his guidance, SanSara weaves ingredients like saffron, ghee, and fine spices into thoughtfully composed plates where each element contributes to a harmonious narrative on the palate.

The dining environment reinforces its culinary storytelling. Set along the riverbank, with glass‑wall seating with a few tables offering outdoor views, the restaurant fosters a calm, thoughtful ambiance. The décor is refined yet understated: polished textures, soft lighting, and minimalistic accents honour North Indian heritage without distraction.

Tasting menus bring SanSara’s story to life. A preview of the à la carte offerings presents a refined exploration of royal North Indian cuisine. Signature highlights include Gosht Ki Galouti, a melt-in-the-mouth lamb kebab; Nasila Dungar Laal Maas, a fiery Rajasthani-style smoky lamb shank curry; and Sailana Shevand, a luxurious lobster preparation infused with royal-style spices. For a vegetarian indulgence, Sarson Ka Saag paired with Makki Di Roti offers a nostalgic nod to Punjabi tradition. The Tali Scallops, delicately pan-seared with coastal Indian spices, introduce a vibrant seafood note, while the much-lauded Shahi Gosht Dum Biryani—slow-cooked lamb layered with saffron-tinged basmati rice—continues to reign as a timeless centerpiece.

Service here is often described as warm, knowledgeable, and attentive. Servers assist with meal pacing and can recommend wine or cocktail pairings. Indeed, SanSara offers a creative drinks list: cocktails like the Old Mumbai (based on Amrut Fusion whiskey) and Nimbu Pani infused with Indian craft gin. Seasonal selections such as Indian whisky pairings elevate the meal, especially during festival periods like Diwali.

SanSara’s public reputation was cemented less than a year after opening. SanSara has consistently been recognized as one of Singapore’s top Indian restaurants on TripAdvisor. In July 2024, it achieved a major milestone by being awarded TripAdvisor’s “Best Indian Restaurant” in Singapore, a testament to its exceptional cuisine and outstanding service. The restaurant has also been featured in Tatler Asia as one of the city’s finest Indian dining destinations, praised for its refined North Indian culinary story and elegant atmosphere.

From 19 May to 31 July 2025, the restaurant underwent renovations and paused operations, officially reopening on 1 August. This downtime is part of a broader hotel refurbishment, and fresh enhancements to the atmosphere and menu are anticipated upon return.

SanSara offers a deeply immersive regional experience anchored in historical tradition and storytelling. It distinguishes itself with a vibrant, richly spiced menu that pairs well with curated drinks and a setting that’s elegant yet accessible.

SanSara’s strengths lie in its authenticity, approachable yet refined North Indian cuisine, and scenic riverside ambience, elevated by responsive service and thoughtful drink pairings. Its inclusion among the Luxury Lifestyle Awards’ Top 100 Restaurants of the World feels entirely deserved. Whether for a business lunch, intimate dinner, festive celebration or friendship gathering, SanSara delivers an experience that resonates long after the last bite.

Even as the hotel completes its refurbishment and prepares to reopen in early August 2025, the anticipation underscores how SanSara continues to set expectations for regional North Indian fine dining in Singapore.
