Located in one of Australia’s most dynamic city centres, Sofitel Melbourne On Collins, is a 5-star hotel that has implemented a wide range of operational changes, demonstrating how long-standing properties can embrace environmentally responsible systems without compromising guest expectations or service quality. The hotel has been recognized in the 2025 International Sustainability Awards by Luxury Lifestyle Awards, for its outstanding achievement in sustainable hospitality innovation.
Since 2015, Sofitel Melbourne On Collins has operated under an ISO 14001:2015-certified Environmental Management System. Over time, the hotel’s internal practices have evolved into a comprehensive sustainability program that includes guest-facing initiatives, internal monitoring systems, and supplier engagement strategies. The hotel has also been consistently awarded the prestigious Green Globe Certification in recognition of its commitment to implementing and maintaining sustainable operations and procedures.
The hotel’s Health, Safety, and Environment (HSE) Committee plays a central role in overseeing progress. Their approach is grounded in measurable outcomes, with a focus on guest satisfaction, environmental data, and operational cost tracking. All departments participate in setting and reviewing performance goals across key areas such as waste reduction, procurement, and food services.
Among the hotel’s most impactful initiatives is its Circular Water Bottling System, officially launched in January 2025 after a successful pilot. Each guest room now features reusable 750ml glass water bottles filled on-site using MODA filtration technology. This initiative is integrated into other areas of the hotel as well. The hotel’s signature restaurant, No35, along with Sofitel’s iconic conference and event spaces, previously implemented a similar filtered water system. Additionally, the introduction of reusable milk kegs and fresh produce containers has replaced traditional packaging – eliminating waste at the point of entry rather than at the point of disposal.
The hotel’s environmental impact is amplified through supplier collaboration and knowledge sharing. Working with local and national partners, the team continually tests new systems and contributes case studies to other Accor properties and the City of Melbourne. Recent collaborations include reusable packaging systems for leafy greens and herbs, and sourcing from Kinaway Certified First Nations suppliers.
While infrastructure constraints limit large-scale changes like solar installation or greywater reuse, Sofitel Melbourne On Collins has prioritized actions that deliver practical results. This includes eliminating items with limited recycling potential and participating in broader programs like textile recycling and low-carbon events.
Looking ahead, the hotel is transitioning to a fully digital waste management platform, allowing for department-specific analysis and more informed decision-making. A second Winnow food waste monitoring system has been added to the conference and events kitchen, its highest-volume culinary area, to help reduce plate and buffet waste through improved planning and menu design.
Sofitel Melbourne On Collins continues to explore ways to improve environmental performance across all departments. With growing internal awareness and data-driven tools in place, the hotel is positioned to lead by example within the city’s accommodation sector. Sofitel Melbourne On Collins’ recognition by the Luxury Lifestyle Awards for sustainable hospitality innovation highlights more than operational upgrades; it reflects a mindset embedded across the entire guest and staff experience.
By shifting long-term habits, streamlining resource use, and eliminating unnecessary waste, Sofitel Melbourne On Collins demonstrates how sustainability can also be at the core operations of a luxury urban hotel.
