Circular Hospitality Takes Root in Lombok

 

At Pullman Lombok Merujani Mandalika Beach Resort, the tropical resort experience is increasingly connected to a practical approach to responsible hospitality. Located within the ITDC Mandalika Tourism Complex in Lombok, Indonesia, the property brings together contemporary accommodation, dining, recreation, and environmental practices shaped by the destination around it. This approach has been recognized by the International Sustainability Awards, with the resort receiving 2026 recognition for exceptional commitment to responsible hospitality through circular food waste management, organic food cultivation, and garden-to-table integration.

A Resort Shaped by Lombok

Opened in August 2022, Pullman Lombok Merujani Mandalika Beach Resort is Accor’s first premium-scale resort in Lombok. Its open reception area takes inspiration from the traditional berugak shelters of the indigenous Sasak people, establishing a connection with local architectural identity from the point of arrival.

Across 257 rooms, suites, and villas, many with private pools, the resort combines island references with contemporary design. Accommodations overlook either the Indian Ocean or the property’s gardens and are designed for different types of stays, from couples and families to guests combining travel with work.

The wider resort experience extends across dining, wellness, and outdoor activities. Two restaurants and two bars serve food and beverages influenced by both local and international flavors, while Pullman SPA offers personalized therapies. Nearby beaches provide opportunities for surfing and snorkeling, guided running trails connect guests with the island environment, and Pertamina Mandalika International Street Circuit is only a few minutes’ drive from the property.

Turning Waste into a Resource

Central to the resort’s sustainability approach is its Waste to Wealth initiative, which transforms resort food waste into Pupuk Organik Cair, or liquid organic fertilizer (POC). The fertilizer is then used across the resort’s gardens and landscape areas, creating a practical circular system that redirects food waste into a useful resource.

The initiative builds on the resort’s Sustainable Garden-to-Table Project, which began in June 2024. Vegetables grown in the resort garden are used in its restaurant operations, connecting food waste management, organic cultivation, and dining within the property.

By producing liquid organic fertilizer from its own food waste, the Waste to Wealth program also helps reduce the resort’s need for external fertilizer. This approach places resource efficiency within daily operations, where materials generated by one part of the property can support another.

Importantly, the initiative extends beyond the resort itself. In collaboration with Bank Sampah Putri Nyale, Waste to Wealth supports local-community learning, adding a knowledge-sharing dimension to the resort’s circular food waste practices. The collaboration connects an operational sustainability measure with learning at the community level.

Measuring Responsible Progress

Pullman Lombok monitors its sustainability performance through regular GAIA audits covering areas including energy efficiency, waste management, water conservation, and responsible sourcing. The resort has also received Green Globe Certification for environmental, social, and economic sustainability practices and EcoBurner Environmental Savings Recognition following its adoption of EcoBurner technology in food and banquet service.

Its environmental direction extends beyond the garden. The resort has identified plans to expand organic cultivation to supply a larger proportion of fresh produce to its restaurant operations, increase the use of water-saving systems and energy-efficient equipment, and develop guest-facing educational programs, eco-tours, and responsible tourism initiatives. It also reports engagement with government bodies and tourism boards around regional sustainability objectives.

Sustainability Within the Guest Experience

For Pullman Lombok, responsible hospitality is connected to both operational choices and the experience of the destination. Waste to Wealth demonstrates this relationship through a direct cycle – food waste is transformed into liquid organic fertilizer, the fertilizer supports the resort’s gardens and landscape areas, and the garden contributes fresh, organic produce to restaurant operations.

The International Sustainability Awards recognition places this work within a broader context of responsible hospitality. At Pullman Lombok, circular food waste management, organic cultivation, garden-to-table integration, and community learning sit alongside the defining elements of a Lombok resort stay – ocean-facing accommodation, dining, wellness, beaches, and outdoor experiences.

Through Waste to Wealth, the resort demonstrates how an environmental initiative can become part of everyday hospitality operations, turning an existing waste stream into a practical resource while extending sustainability learning beyond the property.
