The process begins with a meticulous, manual harvest of the cane, which is then crushed without adding water. This method captures the intense fragrance of the cane, leading to a natural fermentation process that prepares the juice for distillation at the Manutea Tahiti distillery on Moorea. Distilled in a traditional copper still, the spirit reveals delicate notes of mint, licorice, and pear, showcasing the full aromatic profile of the O’Tahiti cane.
