ACETAIA MALPIGHI PRODUCING TRADITIONAL BALSAMIC VINEGAR SINCE 1850
The history of Malpighi family started in 1850, when Pietro Malpighi, great-great-grandfather of the current president of the Acetaia, passed to his son Augusto a precious heritage: the recipe to produce the real and genuine “natural Vinegar”.
That precious recipe has passed from hand to hand for five generations, five generations sharing the same passion, the respect for a strong tradition that has been conducted for a long time until nowadays. Time passed, our spaces have multiplied and today Acetaia Malpighi takes care of more than 3.000 barrels where the real Balsamic Vinegar of Modena DOP stands and slowly ripens, a treasure held in the hearts of those who know it closely.
In addition to Traditional Balsamic Vinegar of Modena DOP and our Balsamic Vinegar of Modena, Acetaia Malpighi also realise a new series of Dark Condiments as Saporoso that mature and improve inside Durmast barrels, with a capacity of 220 litres each. Inside these small wooden barrels, our Condiments, obtained from cooked must of Trebbiano and Lambrusco grapes produced by us, age for many years until they reach that density that makes them so versatile in cooking.
